"Birchun" is what Bundelkhand calls processed jujube — the small, ridged fruit that ripens between February and April on hardy trees that need almost nothing to survive a Banda summer.
In our grandmothers' homes, ripe jujube was sun-dried on the rooftop, ground on a stone, and kept in a steel dabba on the kitchen shelf. When summer arrived in earnest — that hot, dry Bundelkhand summer that doesn't loosen its grip until the monsoon — birchun went into a glass of water with a pinch of black salt and a squeeze of lime. That was the cooler. No ice, no sugar syrup, no powdered drink mix.
We make Birchun the same way. The trees are the same trees. The sun is the same sun. We hope the drink tastes the same too.

1 tsp Birchun Powder + 1 glass cold water + a pinch of black salt + a squeeze of fresh lime. Stir well. Drink first thing in the morning, or right after coming in from the heat.

Our Birchun comes from family orchards in Banda district, where jujube trees have grown — mostly untended, mostly old — for generations. We pick the fruit at peak ripeness and dry it the same week. No long storage, no transport across the country, no industrial processing.

In a cool, dry place, away from direct sunlight. After opening, the jar is fine on the shelf, but transferring to an airtight container in humid weather (or the monsoon) keeps the powder loose and aromatic.
